Banana Ice Cream with Blackberries
(1 serving)
Freeze peeled bananas (to be used as needed)
Place 2 frozen bananas in a blender and blend until smooth.
Place 6 blackberries in a microwave safe cup and heat for 40 seconds (or saucepan- and heat covered on low until they are soft and falling apart.
Pour blackberries over frozen bananas.
(Alternative: Add crushed walnuts)

Banana Oatmeal Cookies- no gluten nor milk
1½ cups rolled oats
1 cup unsweetened coconut flakes
½ teaspoon salt
1 teaspoon cinnamon
½ cup of almond meal
½ cup almonds finely chopped
1 cup raisins (or other dried fruit)
3 ripe bananas, mashed
2 eggs
¼ cup melted coconut oil or butter
1 teaspoon vanilla extract
Preheat oven to 350 degrees. In a large bowl, combine all dry ingredients until well mixed. In another bowl, mix together the mashed bananas, eggs, oil, and vanilla. Stir into the dry mixture. Place approximately 2 Tbsp of the mixture on the cookie sheet for each cookie. Bake for 18-20 minutes, just until they begin to brown.

Another Banana Oatmeal Cookie Recipe for those with nut allergies
gluten, egg, nut free Oatmeal Cookie
3 medium ripe bananas, mashed
1/3 cup butter melted
2 cup uncooked quick-cooking
1/4 cup skim milk (can use soy)
1/2 cup raisins
1 teaspoon vanilla extract
Heat oven to 350°F. Mix all the ingredients together in a bowl. It’s important to mix the ingredients thoroughly so all of the oats will be evenly moistened. Let the cookie batter stand for about five minutes, then drop heaping teaspoons of dough onto a greased cookie sheet. Bake for approximately 15 to 20 minutes or until the cookies are lightly browned. Remove to a wire rack to cool. Makes about 2 1/2 dozen cookies.
