Snacks

 

Here is a list of easy snacks that I often carry with me:

 

Apples

Baby carrots

Raw almonds

Tortilla chips (with salsa or guacamole)

Sea weed chips

Tortilla Chips

 

1 pakage of corn flour tortillas

 Coconut oil

 

Cut flour tortillas in half horizontally and then in half vertically

Heat coconut oil on med/high

Place tortillas in oil and fry until golden

Remove tortillas from oil and drain

 

Tomato Salsa (Pico de Gallo)

 

3 tomatoes chopped

1/2 cup finely diced onion

5 serrano chiles finely chopped

1/2 cup chopped fresh cilantro

1 teaspoon salt

2 teaspoons lime juice

In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice.  Refrigerate for one hour for best flavor, or serve immediately.

Gaucamole

 

3 avocados - peeled, pitted, and mashed

1 lime, juiced

1 teaspoon salt

1/2 cup diced onion

3 tablespoons chopped fresh cilantro

2 roma (plum) tomatoes, diced

1 teaspoon minced garlic

1 pinch ground cayenne pepper (optional)

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
